Delicious Grain-Free Waffles

Okay, I just made these waffles and they were pretty darn good for gluten free and grain free!!
(My middle daughter is allergic to grains so I'm always trying...)

For a good time, make these:

In a bowl mix 2 eggs, 3/4 cup gluten free baking mix, 1/2 cup coconut flour, 1 cup milk curdled with 2 T. vinegar, 1 cup water, 1 tsp. baking powder, 1 tsp. baking soda, 2 tsp. organic raw sugar, 1/4 cup olive oil. Mix until not lumpy. Don't pour all the water in at once, just add as needed to make the batter smooth enough to pour.
*You may add 1/4 tsp. salt, 1 tsp. vanilla if you like. You may also substitute milk for almond or rice milk, and the eggs for egg replacer or boiled flax seeds. And check your ingredients in the baking powder and soda, if you're allergic to corn there is cornstarch in these.

Heat your waffle iron and brush butter or oil onto it before pouring each waffle.

I topped ours with homemade whipped cream sweetened with honey and apple sauce.

Oh my. These were devoured by all. (Don't taste uncooked batter, very yucky).
