Oven 325 degrees
Warm ingredients below for 20-30 seconds in the microwave or on stove top until the honey melts:
1/3 c. olive oil
2 T. honey
2 T. maple syrup
2 T. warm water
1 T. apple cider vinegar
1/4 t. salt
Mix in a mixer such as Kitchenaid:
3/4 c. oat flour
1/4 c. brown rice flour
1/2 t. baking soda
1/2 c. chopped dates
Add the wet ingredients to this mixture in the mixer bowl.
Then continue to add more oat flour slowly (about 1 1/2 cups) until the mixture becomes a non-sticky ball. Then divide into two balls.
On an ungreased baking sheet,scatter some oats and press each ball into the oats on both sides creating a 6 or 7 inch round. Cut each round into 8 wedges. Do not separate. Bake for 25 minutes until light brown. Do not overbake or they will get too crispy.
We topped ours with strawberry jam and soy whip cream. But they are wonderful all by themselves!
