Tummy Yummy Gluten Free Snack

This is a no bake treat!

1/4 c. coconut oil
2 oz. semi sweet chocolate chips
2 oz. carob chips
1/2 c. chopped almonds
2 T. sunflower seed butter
1 scoop Spirutein gluten free chocolate powder for kids
1/3 c. finely chopped dried apricots
1/2 c. pepitas chopped
1/2 t. vanilla
2 c. crispy brown rice cereal

and you can add sweetener if you need it, but I didn't.

Melt the oil and chips in a large pan, stirring to avoid burning.
Turn off when melted.
Add all the ingredients except the rice cereal. Mix well, then add rice cereal.
Line a pan with parchment and press the mixture into the pan.
Cover and refrigerate for at least 1/2 an hour.
I am storing these in the fridge, because they taste great ice cold!
