Sugar Free Natural Cake for Kids and Adults Alike!

My daughter Holland is not supposed to eat sugar, and neither am I. I am trying my hardest to stay away from it, but I love a Tiger Milk Bar now and then, and chocolate, and other stuff. We're also determined to leave white flour behind us. It's so bad! Holland is also on a nasty tea from Dr. Charles, so I had to create a cake to hide the pulverized tea in. Below is my recipe based on a fresh apple cake recipe I've had for years.

Healthy Applesauce Cake (No Sugar)

Oven 350 degrees for 40 minutes in a 13x9 pan.
If you make muffins it could be as quick as 20 minutes.

1/2 cup Canola or Olive Oil
3/4 cup all natural apples sauce (no sweeteners)- I use organic
2 containers of organic squash or sweet potatoes (baby food pureed)
1/2 cup real maple syrup or honey
3 eggs
2 cups whole wheat or white wheat flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
3 cups raw apples chopped small
1/2 cup raisins (optional)

Mix all the wet ingredients together, and then put all the dry ones in and mix well.
Pour into a buttered pan or muffin tin.
Serve with real whipped cream or make a glaze with 1 Tbsp. butter and 3 Tbsp. maple syrup or honey.

Update: Trader Joe's has pureed squash and sweet potatoes (organic) in a can that is a lot cheaper than organic baby food. Try it!
I store these in the fridge and they don't last long...

Also bought some organic powdered sugar from Wholefoods and made gorgeous buttercream frosting!
